A man in Brazil accidentally discovered something precious from the Jacu bird, the most precious and expensive specialty in the world.

In the early 2000s, Henrique Sloper de Aráujo, a farmer in Brazil, discovered that Jacu birds were causing serious damage to his coffee plantation.

Instead of trying to chase them away, he decided to make use of what the Jacu birds had left behind in their waste. He noticed that there were many coffee beans in this waste.

After recalling the famous weasel dung coffee in Indonesia, he came up with the idea of using Jacu bird droppings to produce special coffee.

He had difficulty convincing coffee pickers to harvest guano instead of coffee cherries. However, he succeeded and began the process of making coffee from Jacu bird droppings.

The process of making coffee from bird droppings is not easy. Coffee cherries from bird droppings need to be washed, peeled and roasted.

The result is a unique coffee with a fruitier and more sour flavor than other coffees. Its smell is described as that of anise.
